Making the Cordial: Place all the ingredients inside a pot, heat until it reaches a simmer, stirring until the sugar dissolves. Next, take off the burner and leave to cool entirely. Transfer into an sterilised bottle, seal keeping it chilled, it will last for about a month.

Preparing the Batch Mix: Pour all the liquids in a big jug, leave to sit for one hour, then filter it best through muslin, making it fully clarified.

For serving: Add 85ml of your batch mix into your stirring glass containing ice, gently stirring lightly for about 60 seconds to chill. Strain into an cold coupe glass or similar, garnish with the cranberries and finish using a brief mist of mandarin oil above the glass.
